Feels like the First Time...

Ingredients
1 egg, beaten
1/2 teaspoon salt
1 cup all-purpose flour
2 tablespoons water

Directions
1. In a medium sized bowl, combine flour and salt. Make a well in the flour, add the slightly beaten egg, and mix. Mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water.

2. On a lightly floured surface, knead dough for about 3 to 4 minutes. With a pasta machine or by hand roll dough out to desired thinness. Use machine or knife to cut into strips of desired width.

Per Serving: 176 calories; 2.1 g fat; 31.9 g carbohydrates; 6.4 g protein; 62 mg cholesterol; 412 mg sodium.

Below is my first attempt. It was a damn sight better than store bought pasta. This also let things click in my head... I now understand how to make Gnocchi, and I look forward to it. With a few more tools to add to my kitchen, I should be able to pull off gnocchi & ravioli. I need to figure out how to do things like tortellini, penne, etc.
